Should I un-install my current Nvidia drivers before installing my new 780 over the two 560ti's I currently have?

You shouldn't have to unless you're using really old drivers. The driver install process changed a while ago which means now you can just install the new ones over the old ones without having to uninstall first, as well as them being unified for every card so just take out the old and put in the new.
If it gives you problems just do the old way and make sure to tick the clean install box.
