I am currently using a Asus 6950 2GB to play my games. At the moment I only use a Asus VE247H 24" monitor to play games on. I have plans to purchase two more of these when they are back in stock and playing games on an eyefinity set up.

However my concern is whether or not this card will be good enough for the task at hand. Currently I can still play most games at maximum settings 30-40FPS+.

What GPU should I upgrade to if needed? I was thinking of taking a huge leap from a 6950 to a R9 290, just to make sure I can hit 60FPS.

A 290 is great choice for Eyefinity and will run most games very, very well at 5760x0180 or thereabouts. However, it will not be able to play modern games at maximum settings at 60FPS - you will need to drop AA a bit or, in some cases, drop to Very High/High. Not a huge sacrifice in my opinion, but definitely worth mentioning.

I ran a few benches over the weekend with 2 x 290's, and you can see there are some games I can't max out at 60FPS even then:

My advice would be to get the screens (I love 3 screen gaming!) and see if you get on with it - some people don't. If you don't, sell the screens and you're not down too much cash. If you do get on with it, then get a 290 and enjoy the performance boost and, if you really need maximum settings, get another further down the line. As both 6950 and 290 both have full size Displayport connectors, you can even re-use the Active DP-DVI adapter with the 290 you'll need for the 3rd screen to run off the 6950. :)
