I am running 2 monitor on 2 460 gtx, in my old i5 760 system. Time for a rebuild, and wish to know what would be the best sub £300 single GPU to replace them.
I game on on monitor, but mainly run photo editing on now, and live music streaming on other.
Max res will be 1680 x 1050.

I wish for a fully AMD set up, if possible. As this will be the base for it.

Ty in advance.

For your max resolution £300 is overkill to spend on a GPU when you have a 6300 at the business end of the bundle.

I would go for a 280x, which is more bang than you will need for quite a while on higher resolutions than you have, then spend the rest of the cash upping the 6300 to a 8320, or perhaps look at some slightly pricier intel builds.

You don't need to match processor brand and GPU brand, you wont gain any advantage from it currently (maybe in the future with mantle).

This. Pretty much any modern GPU will do dual monitors just fine.
