I have Gigabyte 3060ti OC it has nice and quiet for few years but now its very loud, I put fan curves on it using Fan control software which doesn't seem to work. The fans randomly crack up top 100% for few seconds every now and then? should I try and apply some new thermal paste? If so which one do you recommend?

Use something like gpu-z or hwinfo64 and look at the delta between core and hotspot. If it's 15+ then a repaste would seem like a good place to start.
