Not sure if something like this has been posted in the past, I couldn't find anything in search.

This isn't up to date, though. Is there any up to date chart?

Also, slightly off topic, but I am looking for a good SLI/CF (x2) set up that will give me a nice FPS range (between 50-80 at least) for games like BF3 and Skyrim on completely max settings using a Corsair TX850 PSU. Would this be possible?
 
If you're playing at 1080p, as your signature indicates, then a single GTX680 would do you. You can always add a second if you need but it's always better to go for a single faster card so that you have scope to upgrade.

Makes sense. I have been considering it... however if I opt to SLI in the future I'll need at least a 1200W PSU, right?

Yup, running in 1080p.
 
Even overclocked a GTX 680 only just goes over 225W.

So a good 750 W PSU could do 680 SLI, go for 850 W PSU for peace of mind. :P

Remember the GTX 680 wasn't orginally going to be the top end card (And won't be for that long). :)

Yeah, I have the TX850 already.

But the 680 SLI must be somewhat demanding at least. I've seen some places saying that the 680 SLI does in excess of 500W. When you look at the rest of my spec in my signature, will my TX850 suffice? My i7 3820 has a max TDP of 130W apparently.

The above link you posted shows it will be fine. :)

They used an i7-3960X with SLI GTX 680s to get 573 W from the wall, so assuming 92% efficency on that furmark burn in test they only used 530 W.

Your TX850 has 840 W (+12 V) avaliable, so you have 300 W to play with for overclocking. :P
