GPU Upgrade Advice

Hi guys, I'm new here and am looking for some upgrade advice around my GPU. I've got quite an old rig now and I am concerned that if I go for too high end a GPU that I will suffer from CPU throttling and not get the best from it. I also don't have massive amount of money, if I did I would probably just opt for a new build, so I am looking for a modest GPU upgrade that won't break the bank.

I currently have the below setup and I'm really struggling with GPU Boss and other sites to compare like for like against my current GPU SLI setup and working towards moving to a single more modern GPU.

Motherboard - Asus Maximus IV Extreme-Z
Intel Core i7-2700K @ 4.6GHZ
Asus ROG Striker Platinum GTX760 x2 cards in SLI config - Total Memory 12122 MB GDDR5
Kingston HyperX 16GB DDR3 RAM
Samsung 850 Evo 500GB

Ok, so I'm out of touch with SLI & Crossfire... Are they still a viable option, supported in game etc? Would x2 RX590 be a better option that x1 RX5700 (as listed above)? Likewise two GTX980 over one GTX1660 Super?
 
I would run a single card as sli/crossfire puts more strain on the CPU. As your gaming at 1080p a 1660 super or similar card would be your best bet.

Multi-GPU gaming has been floating dead on water for years.
Even before DirectX12 made it job of game developer to utilize multiple GPUs, GPU makers had mostly lost interest to do game specific tweaks to drivers to get benefit from multiple GPUs.

Also if you play newer games quad core is bottleneck in heavier games anyway.
In fall/before Christmas next-gen consoles will bring 8 cores/16 threads as base level.
