GPU upgrade advice...

So, I'm looking to upgrade my faithful old GTX1060, yeah - I know...I have a limited budget of £500 but I need to upgrade the CPU as well.
I'm on an MSI B450 MB (gaming pro carbon AC) which I don't need to replace as yet and I have a seasonic Focus+ Gold 650w PS.
I want to get a Ryzen 5600X (MB bios has been updated) so that leaves me with around £350ish to play with.
I do have a 144hz 1440p g-sync compatible monitor and would prefer to play stuff at 1440p.
I'm not looking to play AAA games very much and certainly not at insane fps but I would like to play Starfield when its out, with reasonably high visuals at a fluid frame rate at 1440p.
Currently i'm looking at an RTX3060TI as this would be within budget. I'm not sure that my setup as a whole would suit an RTX 4060 - TI or vanilla what with the reduced memory bandwidth on the card and the B450 being pcie 3.0 but I'm ready to be persuaded if I have got that wrong.
The alternative is an AMD card but I really don't know much about them and I'm rather curious about ray tracing and DLSS.
What would you guys reccomend?
 
First of all, loads of thanks to everyone who replied. I've been busy looking into AMD cards.
However, I can't say I'm sold on AMD. I get what everyone is saying but I'm not sure that is entirely pertinent to my situation.
I'm not looking to play AAA games at ultra high settings and insane fps. I'm also not convinced by the prevailing view that 8gb vram isn't enough - its not a deal breaker if I can't play at the highest texture settings.
I am concerned about issues with AMD drivers - their stability and the lack of frequency of updates.
And least of all - aesthetics. My PC has a white interior and I would quite like to replace my white 1060 with another white graphics card - and there aren't any AMD ones!
You guys are entirely correct about the best bang for the buck is with an RT 6700 XT, but in my mind at least, that's not all there is to consider.
I guess theres a good deal of brand loyalty involved too.
Since I swapped out my 2D cirrus logic (2mb) graphics card that was paired with an Orchid righteous 3d card for the original Nvidia Geforce card, I've only ever used Nvidia.
I've waited until the 4060's were released to make some judgement but all its done is muddy the waters , so to speak.
As I said earlier, its not the 8gb vram that is the problem, but the 128mbit bus on pcie 3.0 that concerns me.
So, if my choice is between a 3060ti and a 4060/4060 ti - what would you choose?
