Just got an Oculus rift and my RX570 just isn't cutting it anymore so open to suggestions, was thinking maybe a used 1070ti which seems to be going for £230 ish?

If you can get a used one for that, that would be a good choice. New cards you'd probably be best with a 1660 super. But the 1070 ti would be a fair chunk faster.

My last 2 cards were AMD and I'm really not wanting another one with the current state of their drivers.

This is what i hate about PC's i always set a budget for myself and end up blowing it massively
It’s my curse too but in this case I think it’s totally worth it. You’ll know yourself how noticeable frame drops in Vr can be. Either 1660S or a second hand 2060(S).
I'd lean toward the latter if you 'must' buy now.
If you can wait until later this year to see what is available that might be better.
With the new cards launching we should see drops for the rest, and if you don't mind going second hand you could get a deal on a 2070 or similar for less than you intend to spend.
