Currently have a Palit 680 Jetstream 4gb... how much faster would a 1070 realistically be? Also I heard that there were problems sometimes with the newer cards and my motherboard? Is it likely to be problematic?

I went from a EVGA GTX780 FTW to my current 1070 which turned out to be twice the performance in a lot of games, so coming from a 680 you would see a even bigger gain. The problem you have is that your motherboard may need a bios flash to be compatible with a Pascal gpu and being a MSI board you are highly likely to end up with a bricked board.

If you're having fps issues in games at 1080p then sure upgrade. Doubt it will be problematic consdiering its PCIE Gen3 slot and it runs at 16x

It's not the slot that's the problem, it's the fact that a lot of older boards need a bios update to be compatible with newer cards. As he has a MSI board that is highly likely to end with a bricked board.

He hasn't got pci-e gen 3 anyway as that was introduced with the Ivybridge cpu's.

Maybe but I can't say for sure. There have been others on here with motherboards from around the same time as yours that the gpu still wouldn't work with the board even on the latest bios.

Just buy from a decent retailer with good returns policy, be careful with all the packaging and send it back if they wont play together I guess.
