Gran Turismo 5 type game for PC.

As said shift 2 is the closest you will get.

Project c.a.r.s is great for what it is in my opinion but its very early and inconsistant at the moment as you would expect with a pre alpha game, and it doesn't look like its going to be in the style of GT anyway, more like rfactor or race series.
 
Be warned shift 2 has some atrocious AI scaling; basically unlike GT5 if you upgrade you car it makes races much harder so you have to be really careful and it takes all the fun out of saving up cash.
 
Grid is veeeeeery arcade compared to "The Real Driving Simulator" wouldn't ever put them on the same pedestal. Grid's a great game and lots of fun, but different.

Shift2 is apparently the only thing on PC besides something like iRacing that has realistic cars/physics.
 
Although you wrote it off in your first post, I'd still recommend trackmania if you haven't played it before.

It's got great progression having to unlock all the tracks, and in the paid for version of TM2 there are tracks/cars that are less surreal than the f-1 car in the stadium.

GRID is prob the best bet..... but you might as well try TM2 seeing as it's free.
 
Shift2 is your best option if you want decent handling & graphics. As others have said, use either Juls Tyre Mod ( if you can find it ) or the PTMU Mod from NoGrip.

You will have to tweak each cars' setup too as Borsch said to get good handling. And be aware that a few cars will still drive like a boat even after this, like the Lotus Elise.

Other than that, Race07 / GTR Evo / RaceOn is your next best bet. Better handling than Shift2, but it is starting to look a bit old if eye candy is important.

GTR Evo is £5.87 at ShopTo atm ( registers on Steam ), as is Race On ( no GT cars )
 
Make sure you don't impatiently torrent it instead- it really needs the last official patch to handle nicely:)

I had tried trackmania before. I remember it involved jumping off stuff. Not really my cup of tea :P

For shift2 mods like "Unofficial Community Patch" corrected many bugs in the game like fuel tank's weight being calculated as if it was outside of the car - a lot cars had that apparently. Consequently such and other corrections lead to better handling game.

There are also some mods that change steering/handling directly- like ptu mod- I dont have them so cant comment.
