Confused about what to enable in Game settings. X16, vsync etc etc etc

I have a 29" Dell 2560x1440 with Sli 970

One more thing, as my screen is 21.9 ratio do I enable that in Game menu settings?

With 970s in SLI, it's safe to enable every quality setting to the max.
Vsync will limit your frames per second figure to a value which equals your monitor's refresh rate.
Nvidia also has what is called Geforce Experience, which automatically adjusts your game settings (for supported games) so that you enjoy a smooth gameplay experience.

Various games have various ways of changing settings. Please also bear in mind that not all games support 21x9 ratios. What game are you having difficulty with ?
 
To be honest half of us probably don't know what everything does in the video settings these days. We're probably also the people that couldn't tell the difference whether something was 4x, 8x, HBAO e.t.c.
 
Most common setting is "aspect ratio" - this determines which aspect ration (4:3, 16:9 , 21:9 etc.) the game runs at.
This is also interlinked with the "resolution" setting, which determines which resolution your game runs at.
You should find either one or both of these in the games you want to play.
