Graphics Card Good enough...

Would just like to know the Graphics Card that i have listed below will it be enough for a system that a Photographer will be using, he will be using Photoshop and will it be able to handle image manipulation and things like that?

Or is that kind of stuff more Memory and CPU Intensive?

It's CPU and memory depandant. In fact I would say that's overkill, and try to find a passive videocard. ATI X300 is more than capable.

I'd go for PC6400 (800MHz) RAM myself. 2GB should be fine, but I'm not into my photography that much so it might be that 4GB is more sensible.
