Hi

Im after a Griddle pan to cook some Steaks on. Got a budget of around £30. Anyone recommend any?

You want a BBQ to cook steaks on, just can't get a hob hot enough.

But yeh failing that flat pan and forgo the markings. They only add decoration.

I cook everything on it now, not used my Tefal since i got it a few weeks ago.

Mate, I have a huge amount of respect for your input in 'La Cuisine' but this is utter tosh. I dare say you may get more heat from a BBQ (although I'd like to see a direct comparison) but to say "...just can't get a hob hot enough" is nonsense. I cook steaks in a cast iron pan all the time on my hob (which is ceramic - so not as good as gas) and, when I put my steak in the pan, I have to leave the back door and the kitchen window open for the smoke. I can assure you a hob can produce more than enough heat to sear a steak properly.

I prefer to do my steaks on a BBQ as well and do so whenever possible but I'm more than happy to do them on the hob as well. Please don't peddle your personal prejudices as fact :)

I actually agree on this one. With a cast iron pan and a gas hob (can't say I would fancy my chances with an electric one) you can make incredibly good steak. You can definitely get more heat from a BBQ if you set it up correctly though. Quite a lot more. I wouldn't say it is needed if you use a decent heavy-base pan though.

That said... A more pro way to do steak is to get your raw steak, blow torch it to caramelise the outside (and kill off surface bacteria) then stick it in the oven at 60C (make sure that you use a decent temp probe to ensure that it is definitely this temperature) and leave it for an hour or so.

You come back to steak that is about as pro as you can get and about as close as you can get to sous-vide without spending a couple of hundred quid.
 
As mentioned, not for steaks but just in case anyone is looking for a cast iron griddle (24cm, square pan) for £5, Home Bargain is the place to go.

Got one last week, seasoned it properly before using it. Best £5 I've ever spend for a heavy chunk of cast iron, made the best thick cut pork chop with fancy griddle lines. Nom.
 
Well I'm more than happy with my griddle pan for steaks. If you get one, get a good heavy cast iron one. Any of the clones of a Le Cruset should be able to be got for £30 to £40. DON'T get a non-stick aluminium one, you need to be able to leave it on the gas until it's practically glowing red :p

Tyne difference is night and day, you aren't going to do steaks on the BBQ all the time, but when you do there really is a massive difference. Just because the pans smoking hot doesn't meat it's the same temp. On a BBQ the fat starts to render out instantly. I cook both ways, but BBQ gives by far a better result.

A point which I conceded.
My objection was to your statement "just can't get a hob hot enough", which I took to mean that you would scorn cooking steak on a hob. My pan gets hot enough to render the fat in the steak just fine. I don't think you'll get many people arguing that a pan is better than a barbecue but it's perfectly fine to use a hot pan on a hob.
