Gsync and Freesync

Can I run a Gsync monitor alongside a Freesync monitor on a 1080ti and still have the gsync benefits on the gsync monitor? Or will it just default back to a lower fps?

Yup, should be fine. It'll only come into its own when gaming so you should be fine.

Edit: might want to have a little Google on that though, I know people here have even had issues with 2 monitors at different refresh rates.
