I am curious, if I were to buy this, would it let me play them on both PC and mac? Or is it only PC?

Dang, thats a shame.
Some (e.g. Football Manager 2011) show both logos if you buy it.
Wonder why some games support it whilst others are separate

On my mac GTA comes up as "buyable" though...

The GTA games are not (yet) confirmed for Steam, MacGameStore is a competing service for Steam, in a worst case scenario there would be a period of exclusivity for them, as R* would not want to limit their potential customer base

Steam does not limit which platform you buy a game for, but perhaps they should have a pop-up to let you know that it won't play on your OS?
That said, I have not seen any Mac exclusive games on it yet
