I currently have a GTX 280 and I am thinking about getting one for the Gigabyte GeForce GTX 460 OC 1024MB cards.

As far as I can see the main benefits that this would give me would be less noise, less power consumption and DX 11 support.

What sort of performance difference would I see bearing in mind my screen runs at 1680 x 1050.

Just upgraded my gtx280 to dual 460s. The single card is slightly faster than the 280, but not by a whole lot ~ 5-10%. If you could get a good price for the 280 it might be worth your while if you're concerned about noise and power consumption.

If you have a descent sli mobo, you have the option of dropping in a second 460 later for a significant boost in most but not all games. They're not expensive cards. The scaling is awesome on these, even at 1680x1050.

The cheapest option of course, is just to drop in a second 280, but noise and power consumption would be pretty high, I would imagine.
