GTX 570 or 580?

I'm building a new gaming rig in January. It will be OC'ed i5 2500k with 8gb of ram, SSD's raid 0 and all the trimmings. I'm looking at 2-3 120hz monitors. I'm not sure what to do GPU wise.

Do I get 2x 570 or 2x 580 or something else?

Any input would be helpful. I have budget for 2x 580's just.

Could aways wait until the next generation of cards are released?

Such as the ATi Radeon 6990 are going to be incredible as well as the 590's

are the 6990's out yet. When are the new cards comming? I think the money will end up spent if I have to wait too long.
