GTX 780 SLI Configuration

I've purchase a 2nd GTX 780 card to give an SLI configuration my first attempt and I'd appreciate any advice you guys can give. Specifically, I'm a bit concerned about power consumption.

My system specs are:

  • ASRock Z77 Extreme4
  • Intel i5 3570k
  • 16GB DDR3 1600MHz Corsair Vengeance
  • Inno3d iChill GTX 780 (I have just purchased a 2nd identical model for SLI)
  • XFX XXX 850W Silver Rater PSU
  • 1 x OCZ Vertex4 256GB SSD
  • 3 x 1TB 7200RPM HDDs
  • 2 x DVD+RW Drives
  • CM Storm Trooper Case (with fan controller for 4 case fans)
All my components are running at stock speed, but as mentioned, my main concern is power consumption. Hopefully 850W will cover me, but I was wondering if it will leave much wiggle room for overclocking the CPU and potentially RAM and GPU?

Equally, I've gone for an SLI configuration in preparation for running GTA V in a triple monitor configuration. I already have 2 x 24" monitors connected via DVI and will be getting a new 24" monitor to connect by DisplayPort. Since I'll have 2 sets of monitor outputs from the graphics cards, does it matter which monitors I should plug into which graphics card? Does SLI run in a master/slave situation? Should I connect all monitors to the same card?
 
The 850w will be fine and the XFX units are solid.

The only issue you may encounter would be a bottleneck if your CPU is running at stock. An overclock to 4.4ghz+ should help but an i7 would be better!

What would cause the bottleneck? Is there a way to work the ideal CPU speed compared to the GPU?

My CPU is currently being cooled by the stock fan, but I was thinking about getting a closed loop CPU cooler. Any idea how far I can OC on the stock fan and/or any recommendations for a closed loop CPU cooler?
