Had a go at GH the other night at my friends, could do easy, but couldnt do medium because using your pinky didnt feel right, do people just move up and down the fretboard like you would with a real guitar?

It just takes practice. You can easily complete medium without moving your hand at all with a bit of practice. But on hard and expert you do have to move your hand up and down the fret to hit the orange notes with your pinky
