I'm getting a new PC within the next 2 weeks and it is coming with an i5 2500k @ 4.5GHz and in order to reach this, it also comes with a Corsair H80 and a 750TX Corsair PSU.

I'm wanting this PC to last a while and so I'm left wondering, is this overclock/CPU combo going to allow this build to last longer than 5 years? Apparently the new 'turbo mode' processors only run at their OC'd levels when highly stressed... so will this be okay?

Depends who built it and how it's set up tbh.
The cpu's only power down if it's set to in the bios, using offset voltage(to reduce idling voltage), enabled c states and speedstep.

If it isn't using speedstep and c states are disabled, it will run permanently @ 4.5ghz.

If you are buying a pre-built system with a guaranteed overclock, then this is something you need to discuss with whoever you are buying it from.

4.5ghz however is a modest overclock in sandybridge terms and you really don't need a H80 to cool it.
A H60 with a single, silent fan is more than capable of cooling an i5/i7 up to 4.6ghz with good temps.

The speed will scale down to 1.6ghz under speedstep then boot to the oc speed when needed, its an excellent feature. 4.5 should last you a fair while, and even then there is headroom for a higher clock, the one thing I will say about the h80 is the fans are loud.
