We make skewers with it instead of using chicken so chunks of peppers, mushrooms, onions and halloumi served with Tzatzik and a couple of flatbreads. Not massively different from what you're already doing but it's all I've got to suggest.

I also once made a lasagne and the top of it was a thin layer of Halloumi, it was a bit heavy going, but tasted great.
I fry it with diced pancetta and caramelised red onion - works best if the pancetta has a nice crisp on it and you've already drained any excess water if you can only get cheap supermarket stuff (I'm looking at you Co-op!)
