Can anyone recommend any recipes or meals that include Halloumi?

Getting a little bored of just having it with flatbread with a salad and a sauce.

Struggling to find some inspiration currently.
 
Bread them with seasoned panko and fry to make a halloumi burger, nice with a red onion chutney/jam.

Halloumi and fruit skewers with a balsamic glaze. Watermelon, mango and other sweet fruits go well.

Roast veg and lemon couscous with grilled halloumi.

Vege full English with halloumi in place of bacon.
 
We make skewers with it instead of using chicken so chunks of peppers, mushrooms, onions and halloumi served with Tzatzik and a couple of flatbreads. Not massively different from what you're already doing but it's all I've got to suggest.
 
Bacon, Halloumi and tomato in a baguette, the ultimate morning after breakfast.
I also once made a lasagne and the top of it was a thin layer of Halloumi, it was a bit heavy going, but tasted great.
 
I fry it with diced pancetta and caramelised red onion - works best if the pancetta has a nice crisp on it and you've already drained any excess water if you can only get cheap supermarket stuff (I'm looking at you Co-op!)
 
We cut it into fingers, batter and fry it.

We then serve it one of three ways, either with Nando’s peri peri mayo, sweet jalapeno jelly or with mint yoghurt and pomegranate seeds.

Also do it with peppers and onion on skewers too and add it to Mexico taco mix and serve in hard taco shells
