Ham carving knife (serrano ham)

The Mrs' mother bought us a full serrano ham for Xmas and we will be having a bit of a ham, cheese and wine night at our house in a couple weeks to tackle the mighty porkiness.

Pretty sure it didn't come with a knife to use for carving just a stand and i've not got any particularly great knifes which I think will be any good at carving it really thinly.

Can anyone recommend me a good knife/tool for cutting the ham wafer thin?
 
It's extremely difficult to consistently get the type of slices you buy in supermarkets at home without their 'power tools'. You can manage it, but it takes a lot of practice, and patience.

I purchased a dedicated ham slicing knife (sold as endorsed by a particular Iberico ham company) and it was fine, but just not up to the task.

If you've got a lovely and thinly ground carving knife that you know how to maintain to a very fine edge, that is what I found to be the ideal tool for the task that was readily-available at home.
 
I have bought these in the past solely so that I don't need have to have it see through and wafer thin like the shops sell. I like a big chunky slices.
