right - here is my problem - my PC runs perfectly - right up until any media is playing or video/animated graphics are running - then, more often that not it freezes!

Unable to reboot safely - power off and start up!

When no media or video/graphics are running - it is perfect. It did not do this when I first built the pc - but it acquired this "bug" over a period of time and I cant attribute it to any particular install either - just reinstalled windows and its doing it again - now I have to work in silence ;-(

Spec -

ASUS Maximus Extreme
4Gb DDR3 RAM
4 x Raptors in RAID 10 on a SATA RAID Card
2 x WD 1TB's in RAID1 on another SATA RAID Card
4 x monitors on a Matrox QID LP PCIe Card
Windows XP Pro - with all updates installed

Well it sounds like a gfx error, as its crashing under gfx load. What gfx card you got?
Have you checked temps during running by using GPU-z and logging to file? maybe the fan is failing?

well - since I backed down the RAM frequency from 1333 to Auto (and that is all I did) - no more freezing!

So what could that be - voltage - RAM failiure?

yeh. Overclocking does make your system unstable... Probably just pushed it too high. Do some Prime95 on the system. and try some nice gaming :D
