HDD and SSD...Need help!

I'm using an SSD for OS and important programs, and HDD for everything else (documents, music, etc.), but I'm having a problem with getting everything to install in the right place.

The question is: How can I make EVERYTHING install on to the HDD by default? At the moment most things tend to try to install themselves on the SSD, and changing everything by hand is really getting tedious.

I want to make my HDD do everything except run windows.

OK, I guess with programs it's not too much of an issue, but how can I change the location of the Windows 7 'Libraries'?
