my builder has embedded an hdmi 2.1 cable in the wall but has made a mess of it meaning most of the length is useless.

as it’s 5m it’s already on the higher end for cable lengths.

Would it be viable to add a male to female wall plate and add another 0.5-1m cable into play?

Not really.

There's no point in beating around the bush here. The additional connection points on the rear face and the front represent steps down in the signal integrity. They're like adding a half-metre length a piece, so if 5m is already borderline then adding the wall plate before you then add the extra cable, it's just too much.

You could try a redriver. Tere are some cheap ones such as the Cablesson here. Honestly though, If it is the builder's mistake, and your requirements were clearly communicated, then it's probably time to sit down with the builder and ask them how they plan to remedy this. This will involve breaking into the wall, setting the cable correctly, then making good. You might even consider taking the opportunity to install some 1"~1.5" pipework in order to be able to pull new cable as and when required.
