I keep seeing mentions of HDR recently, along with the recent E3 announcements it seems that its going to be involved in gaming as well.

Now, I've processed photos in HDR and whilst in certain instances its beneficial, I couldn't imagine it working well on a moving picture, constantly.

So those who have seen it...what are your thoughts? Also are we seeing 1080p HDR content, or is it 4k only?

Are projectors adopting this?

HDR is for 4k content only.

HDR produces a more life like picture as it uses a much wider colour gamut.

UHD - rec 2020
1080p - rec 709

That gulf in picture quality and colour is amazing with a good setup. It's not so noticeable on cheaper 4k LCD sets as they are cheap for a reason. You really need a decent OLED to get the most from UHD and HDR.

1080p to 4k HDR will never beat SD to 1080p in terms of overall visual improvement, but the difference is there. 4k is also (and perhaps mainly) about the new audio formats. Whilst you can get some 1080p blu rays with atmos or DTS:X it will be primarily used on UHD disks.

The xbox1 S could be a lemon if they only allow it to push through basic 5.1.

On a decent set with a high quality source UHD HDR looks breathtaking. It's a huge leap in picture realism, much more than even SD>HD in some cases. But you do need a good set, ideally OLED, to get the most out of it. With a lesser set there is still a notable difference, but it's not quite the same.

UDH HDR projectors exist and are good, but they are still quite new and VERY expensive!
