I am planning on building a nas, the motherboard that I am looking at does not come with onboard video. If I don't have a graphics card connected, will it still boot and load the operating system? Obviously to minimize power draw I don't really want a graphics card in all the time.

Yes it should do, it will initialise the slot, but it does not need the gfx card. I assume that you will be using a web front end on another PC? You could just have a 32mB pci card in case you need to show the boot on a screen. This is what I did (Radeon 7000 pci) but later removed it.
