Healthy does not have to mean bland

In my (read mine and the Mrs) plan to get healthy, and to be honest I need to shift some lbs for summer, I'm determined to cook healthier.
I cook a lot, and being in France, and well in general, I like nice rich food which tends to contain not so good for you ingredients (butter, cream etc.)

With a view to making us more healthy, I'm going to be doing a series of recipes for the summer/spring, seasonal but healthy and tasty at the same time.

First for me to try this week is:

Sirloin with Teriyaki broth

lean cut of meat with light broth underneath but should be packed with flavours.

I'll do the recipe up once it's done, but thought I would share trying to be healthy, (This recipe is sub 400 calories per serving) yet still satisfying myself being massively foodie.
 
Popcorn is relatively healthy if you don't load it up with too much salt/butter/sugar.

The sirloin recipe sounds interesting. I'll be looking forward to reading it :)
 
Good start! Japanese food in general is a great place to look for interesting healthy food that also satisfies the foodie geek.

Why not try a Japanese breakfast instead of a fry up for example? A small bowl of steamed rice topped with fish such as a mild smoked trout, served with freshly pickled vegetables and a bowl of miso soup. It's nothing like an English breakfast of course, but it's savoury and filling, will leave you feeling satisfied but not heavy. It's also so different that if you're into food you can't help but be fascinated by the experience.
 
So last night's was nice, but I made it a little too hot for the Mrs. She was in pain. Then didn't eat it, so I have it for lunch today as well haha.

It doesn't look all that, which is a bit gash, but it was really tasty and surprisingly filling.

Recipe was:

1 bunch radishes
5 tablespoons teriyaki sauce
3 tablespoons oyster sauce
3 teaspoons grated peeled ginger
1 teaspoon chilli (I used a habanero sauce, but a bit too much)
Freshly ground pepper
1 1/2 pounds boneless sirloin steak (I used rump though, no decent sirloin in shop)
2 tablespoons unseasoned rice vinegar
1 tablespoon packed brown sugar
Mushrooms, mixed amounts. Go crazy.
4 asparagus spears
1 bunch spring onions
Sesame seeds for the garnish
750ml water~

For the broth, I used half the teriyaki sauce and oyster sauce with 2tsp of the ginger, the rice wine vinegar, sugar, chilli and water all in a pan and simmer just to dissolve the sugar. Then add all the asparagus and mushrooms.


While doing this add the remainder of the teriyaki sauce and oyster sauce and 1tsp of ginger to a bowl, the pepper, add a small drizzle of sesame oil and slap all over the steaks. Heat up a pan, dry, until its hot as hell and in go the steaks. They don't need a lot of cooking at all. 30 sec a side?* (depends on thickness)
Take off and leave to rest for 5 mins.

The broth should now be going well and veg crisp but tender and mushrooms softened. Add the radishes and the spring onions to soften slightly for a couple of minutes and serve.

Bowl the broth and add the steak on top, garnish with sesame seeds and for me, parsley a la 1980s.

Was light, but filling and packed with flavour and fresh veg.

As said, presentation is a minus 10. Poor Ross. But very nice.
 
Presentation could've been better yeah but the taste is far more important :p It sounds really good and I'll definitely be trying a variation on your recipe :)
 
The only things I think I'd change would be to not use a premade teriyaki sauce (it's very easy to make your own and it's soooo much nicer) and probably to use lots of fresh chilli or maybe sambol or chilli jelly instead of a 'chilli sauce'.
 
Would agree with you too! Didn't have any chillies in the supermarket either. Stupid place. Need to go to the german one which has a much better selection. Also, I was going to do own teriyaki as well, but then it ended up being late, lazy moi etc. No excuses :P

Ah yeah...I know what you mean about laziness. I often take tons of shortcuts in food making for exactly that reason :)
 
I even bought honey at the shops, just to make it. Super lazy. I was getting ear off the lady so just wanted to get it done.
Then I go and make it proper hot and she didn't bleeding eat it. Least I got it twice!
 
Last night I went for a smoked herring and new potato salad with a light dressing. Was really nice actually and filling as anything.

Going to have some salmon fillets tonight, and marinate some pork in cider for tomorrow night.
 
I did steamed salmon last night. Mine was more manly than the Mrs' though. I did mine in foil with salt, pepper, bay, lemon, rose wine and some holy **** sauce. It's naga sauce and was awesome. Served with a plethora of vegetables, but the salmon was just amazing.


I've marinated some pork for tonights dinner, which consists of:

Pork loins/chops x4
500ml bottle of cider (nice stuff, not ****)
250ml water
2tbsp brown sugar
1 cinnamon stick (I used mexican cinnamon from: http://www.capsicana.co.uk/products/herbs/mexican-cinnamon which is just mint)
3 bay leaves

Simmer all that down for it to reduce a bit, and alcohol to simmer off.

Crush some garlic (I used 3 cloves) and then when the liquid is cooled, I used a sealy bag, slapped it all in together and left overnight.

Tonight will be nice pork, once I've been to the supermarket. Joy.
