Help an Apple Newbie...

I'm after some insight in an area I'm not strong with - Apple! Basically I work for a company who operate in the retail space and looking into asset tracking. There are loads of things out there for assets, but the assets are usually low volume high value. We're looking at tracking assets which are low value but high volume, so asset solutions where the tags cost 100s and require sim cards etc are just not going to give a ROI. So we've started looking into apple airtags, however they are aimed squares at consumers not businesses (max 32 per account etc).
There are, however, a number of companies out there that offer the service we want - apple air tags and as many as you want. When I've done some digging, they seem to be working on a "loop hole" where an old version of mac (14) didn't encrypt the "find my device" data. My concern with this is two fold - firstly Apple could pull the rug whenever they want in regards to terms and conditions, but they could also stop supporting that OS full stop, making it non functional.
So what are apple like with old OS? If these companies are running VMs with MacOS 14 on, are they able to run indefinitely or does apple ultimately have the ability to kill switch them and if so have they / what is the typical window (10 years after release? 15 etc)?

Any help with this would be appreciated.
