Could someone help me to choose RAM for my computer? My motherboard is Asus P5E64 WS Evolution:

And in RAM compatible specification it says:
4 x DIMM, Max. 8 GB, DDR3 1800(O.C.)/1600(O.C.)/1333/1066/800 Non-ECC,Un-buffered Memory
Dual Channel memory architecture
*Overclock speeds
**When installing total memory of 4GB capacity or more, Windows® 32-bit operation system may only recognize less than 3GB. Hence, a total installed memory of less than 3GB is recommended.
Currently I have two blocks of ram Corsair XMS3 CM3X1024-1066C7 (2 x 1GB), DDR3 SDRAM, with timings7-7-7-20.
My questions are:
1. Would it be possible, to buy RAM with speed 1800 or 1600 mhz, I know it says it will work overclocked only, as per manual, so do I need to O.C it and how?
2. Which of them are suitable for my system:
• Corsair 4GB DDR3 1600MHz XMS3 Memory Module CL9 (9-9-9-24) 1.5V
• Corsair 4GB (2X2GB) DDR3 1600mhz Vengeance Blue "LOW PROFILE" Memory Kit CL9 V1.5
• Corsair 4GB DDR3 1600mhz Vengeance Memory Module CL9 1.5V Non-ECC Unbuffered
3. Overclocking means setting voltage to 1.65 and setting latency to a different value, if my Motherboard can handle 1800 mhz how do I O.C it?
Currently I have only 1066 mhz, but I would like to run RAM as fast as it’s possible if my motherboard can handle it. I’m not giving links here, where I found them to buy, as it will breach rules on this forum. You can write me just specification for the RAM to buy, and I can find them myself.
Any help would be greatly appreciated from anyone.
