Help doing re-touch work in Photoshop

I used to use Photoshop a lot when I was younger and had nothing better to do, was actually not bad with it but this way back on v6. I want to get back into it and start by playing with some portrait shots and touch ups of the skin.

Also looking for the best ways to remove someone from a pic and place them in a different scene. What are the best tutorials for this sort of thing?
