Help find the type of car I want please.

TLDR at bottom!

I currently own a golf gti 1.8t (2000) and posted about 10 month ago. The car is still running fine since I bought it nearly under 2 years ago.

I have since upped my budget and can spend about £10k and have a few k for repairs/warranty.

I have only ever driven:
Citroen saxo 1.1
MGZR 120 1.8
Citroen Saxo VTS
Golf gti 1.8t
I tried a friends bmw 320d (2000) and really liked the drive and feel of it.

My current problem is I have no idea what type of car i want and have no idea how they drive differently like turbo charged / na.

I didnt like the MGZR because it wasnt quick until you get the revs high. I'm not a fan of the turbo lag/delay on the golf because by the time you get going its taken to long to get to speed and need to slow down due to speed limits (Kicks in about 2.5 but seems even longer). The saxo VTS was very fun but just didnt feel very quick. The BMW didnt seem fast but seemed the most balanced and just generally quick without trying, fun to drive.

I have always bought private, and never been to a dealers. Problem is I want a balanced car that ticks all boxes which as you lot have said before seems impossible without compromise.

I was doing 12-16k miles per year but thats now changed and I barely do any but depending on job circumstances which change every 3 month could be back to 12-16k so I cant have a 20mpg car etc.

To sum up I want a car thats fast but low down quick so 0-60 and at roundabouts and speed instantly as soon as you put your foot down. A car thats fun to drive and I would also like it to be good in the wet. I find it useless having my golf wheel spin as soon as I plant my foot and the handlings not the best. I was thinking of a Renaultsport 200 but dont think they are fast enough?

TLDR - I want a very fast car at low speeds with instant response thats good in the wet with not too bad motorway MPG should I need to do 12-16k miles thats fun and comfortable. What kind of cars should i be test driving? I liked my friends Seat Leon FR 2.0 TDI, it was quicker than my golf with good MPG and a nice ride quality.
