Help me desiggn a 3 course meal.

On Saturday we are having a belated birthday meal for Seabiscuits Dad. Now I would like to do a nice three course meal! I was kinda thinking duck legs in a red wine sauce for main, but open to different ideas.
Also ideas for starter and a pudding.
Something to bear in mind before posting is Seabiscuits dad is lacto intolerant and hates most green stuff (ie veg salad but will eat carrots).:) I shall provide photos
 
Small squares of pork belly surrounded by a drizzle of some kind of jus and a sprinkling of rocket. Might make a nice (though quite hefty) starter. I love pork belly :) It also has the advantage of being something that you can mostly cook the night before and then just finish it at a high temp in the oven. Google ~"pressed pork belly" for ideas.

A vegan friend of mine makes some amazing lactose-free cakes. Last time she was round for a meal we had slices of those with sorbet. Quite delicious. There are good recipes online.
 
To be honest you cant really go wrong with -

Scallops with some bacon and celeriac puree.

Duck Breast with a cherry or sweet sauce and some mash.

Choclate brownie and some cream.
 
Last 'proper' menu I did was this:


Seared Scallops upon Celeriac Purée, topped with Black Olive Tapenade

Mocha Steak with a Miso and Mushroom Sauce

Green Tea and Vanilla Panna Cotta
 
Yea, fishy starter is a good call. You can also knock up something like a salmon/ [insert a smoked fish] terrine very easily and it's light enough for a starter.
