another option: One Titan X instead of going for a pair of 1080's in SLI? Or is that Overkill for a PC which will be used for nothing but gaming/music/general web browsing 99% of the time?

Depends on what monitor(s) you will be using, as this has not been mentioned.

What monitor in particular, as a Titan X on a 1920x1080 would be wasted.

Decide on which monitor you want and get the card that will enable you to max out games on it. No point in having a high end Gpu, if it is not going to be fully utilised.
