Help me with a little project :) Pleeeeease

Hi folks, O.K. I got my hands on 2X old shop tills, It has a small colour touchscreen monitor with a 2 row LED display on the back (would normally show a customer price etc). Inside it has a via epia mini itx m1000 mobo with a
graphics card that runs the 2 displays and supplies power through a parallel printer type plug and runs the till software from a CF card. Banging a HDD in and running windows would be too easy so was wondering if anyone could suggest a lite OS that would use the touchscreen? I found an open source project called Meego, the tablet version looks tidy. Any suggestions?

depends what power there is in the till, but id say give archlinux a go, its quite lightweight and they even have a wiki for the kernels touchscreen drivers,

i think most linux distributions support touch screen drivers, but i'm not sure if you are after an OS that will support it natively without fiddling?
