It says you followed the ROG guide to get to 4.8.
You got to 4.8

Now most folks will use those settings to bench not run stability tests.

PD/BD chips get very hot when you stress them with P95 or IBT.
You cannot maintain maximum clocks or anywhere near.

What do you want a high clock speed for bragging rights or MAX stable under heavy load. ?

I prefer to use BF3 to stress test my CPUs since it also gives my GPU a good work out as well. One of the few games that can max all cores and your GPU if you tweak the settings right.

whats a good custom settings in P95 to proper test it instead of using the 1st option? Also what is considered a high temp for 8350 ?? and a good for OC ?

68 is fine for a stress test if it isn't crashing. Really you want to try lowering the voltage to get the temps down. Most 8350s won't need 1.5V for 4.8GHz. Literally just use the blend test and leave it for an hour. As a rule of thumb I find 20 minutes of prime stability = at least 2 hours worth of intensive gaming.
