Pc graphics will always look better on a PC than a PS3, no problems there =)
As to the graphics cards, at their current prices I could not recommend a GTX480. A powerful card it is, but it is not worth the extra 75-80 quid over the 5870 for another 10% performance and software that is relatively useless gaming-wise (phsyx anyone?)
SLi does scale better than Crossfire, but by the point that you are in a position to buy another GTX480 or a 5870 you may as well buy a new card, the refreshes are due out in a few months, and both cards will last longer than that.
If you were buying a multi-card config off the bat I would suggest Nvidia, but otherwise I would suggest ATI, they are cheaper, cooler and make less of an imprint on your electricity bill
High end PC gaming is expensive. You have to keep in mind you're paying a fair bit extra than you really need to run games with decent settings atm, but it should still be quite fast 2-3 years from now.
