[Help] Subnets, how do they work?

So I'm really, REALLY confused about subnets here is the scenario I've been given.

"lets say there is a business which uses multiple switches and routers to ensure redundancy. Along with this there are 300 users and it's using IPv6."

given that scenario this is my understanding I've checked out this link and I'm assuming that in order to accompany all these users on the network I
will require a /119 since it allows for 512 IPs. so is the /119 the amount of subnets because that seems like a lot of subnets and wont having that many
different subnets somehow slow the network down.

I'm really confused I would have thought that creating 2 subnets would simple allow the amount of users to double. Obviously I'm really missing something
can someone please explain or link me to something that will help.

Thanks, that's great for working out how to divide a network but I still don't understand how I can make 300 client pc's work on 1 network. :S
