Help testing 120mm fans

I have two different fans I want to test with my Hyper212+. What's the best benchmark/logging app to record the temp and show a graph?

I was going to use prime95 to run all cores (i5-2500K unclocked) - does this have a temp graph? (Or is there a better CPU stresser?)

Would it be best to turn off all the other fans while testing?

Roughly how long should it take to reach a stable temp? (And at what temp should I pull the plug? )
I know people run prime95 for hours/days to test stability, but I just need it to reach a stable temp quickly.

Prime95 is excellent to cook your CPU, give it 15-20mins

As for a program to show the temps in graph form, then heres a few I just googled,

If you use OCCT it will stress the CPU and produce a graph at the end of it too.
