Help with text in photoshop

Hi folks,

I am trying my best to learn how to use photoshop but am struggling with this.
I am trying to write some text over a picture but am struggling, I have chosen a font I want to use but can't get it right. I am trying to write over a picture but the picture comes through the text, what I want is for the text to be white on the inside of the black outline and not show the back gorund through. Please see the picture below for an example.

Can anyone suggest a way of keeping the inside white? I haven't got the patience to go through all the text (there's quite a lot) and paint it in white!

-Create a new layer above the background image layer

-Write your text in that new layer in the colour white, and position it where you want etc.

-Right click on the text layer and go to blending options, go to the stroke tab and apply a black stroke of your chosen width
