Help with understanding RAM

Evening folks,
I've never had to buy any RAM for any computer I've owned but I want to look at upgrading my RAM.

So looking through my MOBO book, it say's I can have up to 6 sticks with a max of 24GB. The RAM has to be DDR3 2200(O.C), 2133(O.C)/2000(O.C)/1800(O.C)/1600/1333/1066MHz

What does (O.C) mean?

So for example would the Corsair Vengeance 12GB work with my MOBO?

I presume any DDR3 ram with any of the above MHz would work?

Also can anyone tell me the difference between Dual Channel, Triple Channel and Quad Channel is?

The O/C means in order to run at that memory speed you need to overlock the system in order to get the memory running at recommended speed.

What is your current motherboard and memory, also can i ask why you need to upgrade.

I currently have 2 Rampage 3 Extreme's one has RAM the other doesn't, So when I said upgrade I actually meant buy so a computer will work:)

Currently I have the Corsair XMS3 (3x2GB) DDR3 PC3-12800C9 1600MHz Triple Channel in one MOBO but I thought I would go for a change.
 
I see, The ram linked will work, but Overclcokers have the Kingston on Pre-order which is slightly cheaper and does not have a large heatsink with may interfear with CPU coolers.
