The spec I'm looking at is a Gigabyte GA-X58A mobo with i7-860 (2.8GHz) , 3x 2GB OCZ PC3-12800, 3x WD Caviar Black 1GB SATA drives (WD1001FALS) in RAID 0, powered by a Corsair TX750 and the CPU cooled by a Corsair H50. I haven't looked too closely at cases yet but perhaps an Antec Sonata.
I'm about £300 over budget, but that aside, any comments? I realize I'm still yet to add graphics, I'll not be rendering/gaming and the like, but I'll be running duall screen 2048x1152 panels (I believe resolutions are not really an issue for graphics cards, as long as you're not gaming/rendering).
I'm also looking to overclock this machine, not majorly - I need to run very stable, if I've picked anything that's not particularly suitable for OC'ing, or perhaps if I could spend less on CPU and more on cooling and come out with a faster more stable machine, any advice is welcome, thanks :).

im no expert on intel systems but three of your proposed componets need looking at

The motherboard you have chossen is a socket 1366
The cpu you have chosen is a socket 1156
and the memory you have chosen is tri channel ddr3 where as the cpu you have chosen only has a dual channel memory controller.

i would change the cpu to this one Intel Core i7 930 2.80GHz for three reason's
1 it is compatible with the motherboard you have chosen
2 it also has a Tri Channel memory controller so the memory you have chosen will work fine.
3 it is nearly £10 cheaper the the cpu you have chosen runs at the same speed and will most likley overclock to the same level if not more.

as sir-les-mp said, u need to change the cpu.

its the 9 series i7's u need with the x58.

920 is the best value if u can get one, otherwise the 930 would be the one to go for

Main components, Ocuk seem not to have the 920 chip.

Thanks sir-les-mp and cycrow for pointing that out, I was sure I read somewhere that this board had the correct socket for the processor I'd chosen and would've ended up with incompatible parts otherwise, I'm going to go for a 930 as you recommend since I'm interested in marginally overclocking the processor (it still needs to be as stable as manufacturer settings but with liquid cooling should be I presume?).

Curious as to why 3tb of Raid 0?

I meant to write RAID 1; mirrored, oops.
