Higher vram vs better card?

More specifically, the 2GB GTX 560 Ti or the 1.25GB GTX 570.

Can someone explain to me the difference, like the pros and cons of each?

Is the 570 a better choice overall?

I would go for the 6970, but I do some 3D stuff aswell as photoshop (main use is gaming, however). I thought (I might be/probably am wrong) that nvidia had a reputation for having a better performance when it comes to that kind of thing.

I'm pretty much settled on a 570 now, unless there are any major reasons I should go for the 6970.

How would a 6950 perform on BF3 then? I'm thinking about going for that for now and eventually upgrading to CrossfireX.
