Holiday suggestions - ~£8k

Family of 4, me, wife and 2 kids 18 and 17. Given the age of the kids it could well be the last family holiday together so willing to spend a bit more if it's really worth it.

Has to be School holidays so 25th July until 4th September.

Likes:
New countries and cultures - would like to avoid western Europe simply cos we've been there loads.
The natural world - rainforest, kayaking, sailing (both wife and I can skipper a yacht)
Sea, swimming, snorkling (never scuba dived)
Speak French, Spanish

Dislikes:
Cities for any more than a couple of days
Crowds of people
Budget of about £8k to include flights and ideally most food.

Looking for ideas - so what holidays have you lot been on that might fit?

Love the idea of Costa Rica, but flights are seemingly about 4 to 5k for the 4 of us. I'll spend some more time on this tomorrow.

Sailing around the Greek islands or along the coast of Croatia.

Pretty close to the default plan which is an bareboat charter from Trogir in Croatia - a week as off grid as possible in the Kornati national park followed by a few days in an airbnb in Trogir to spend wandering around the old medieval town, people watching in cafes, that sort of thing.

I'll have a look at Mauritius - any personal recommendations for locations/hotels would be great
