holidaying abroad (next year)

So me and the family are looking at taking our first abroad holiday together (will have to get 4 new passports:p). Were looking at school holidays so July/August and are looking for a week. We've been to quite a few places in Europe before the kids so we're think maybe Spain or greece, however it's looking to be around 1600 for just a week (currently pay that for Cornwall), what happened to going out of this country being so cheap (I know Brexit really hasn't helped). What websites do people use and is it still way cheaper to book separately rather than as a package? Were thinking beech/pool with maybe a waterpark thrown in, kids will be 7 and just under 5.
 
How is it going to be cheaper for travel and accommodation for somewhere abroad than it would be here? Please explain how you thought getting on a plane and ending up somewhere hot in the school holidays would be less money than driving in your own car to Cornwall?
I'm sure it used to be cheaper to go abroad (however we've not travelled in school holidays abroad before). Also the last time we went abroad was 2011 so it was better value for money. What's the going rate for a week abroad then, 2 grand?
