Homebrew Cherry Wine

I helped my step dad harvest the cherries from his tree today (>20kg from a single tree in a courtyard garden :eek:). There were a bunch which were perfectly good, but had split, so I brought them back with me to make cherry wine, as they will be split straight away anyway :)

Ingredients:

3.5kg cherries
Pectolase
Lemon
Citric acid
Tannin
1.2kg sugar
Yeast


So, first job is to clean and de-stalk the cherries, and they look like this:

Just boiled 3.6l water to steep them in, when cold I'll crush them all with a spoon. Will keep updated as I continue :)
 
Ok, mash done (ended up using y hands as the spoon method was going to take an age :p). Also added 2 tsp of pectolase, to try and get a clearish end product.

It already has a good red colour and smells fantastic! This will steep for 2 days now, with a few stirs each day. I'll update this in a few days!
