Hot weather meals

We tend to eat a lot of salad as main meals in the summer (along with some cold meats, potatoes etc). However, I personally find it gets a little dull having the same things, anyone have any ideas for some variation? Thought about adding some pasta into the mix but not sure how to bring it all together so to speak.

All light, summery meal ideas welcome! :cool:
 
How about some grilled chicken/meat with some spices rubbed on, in pitta breads with some salad and something like tzatziki?

Or we eat light things like spanish tortilla or frittata, can put whatever you like in, can cut it up and eat it cold if you want.

Maybe quiche or something?
 
Orange cous cous with grilled marinated chicken and pine nuts. For the orange cous cous is just a case of segmenting the orange with a paring knife and squeezing in the left over juice from the body of the orange once the cous cous has cooked.
 
I do a summery pasta salad which goes something like this:

Little Gem Lettuce (torn so it doesn't go brown)
Red pepper (sliced)
Green pepper (sliced)
Spring onions (sliced)
Cucumber
Sweetcorn
Smoky Bacon (sliced into strips and fried crispy)
Pasta of choice

Add all the salady stuff into a big bowl, boil your pasta up and fry your bacon, once the pasta is cooked add the bacon to the drained pasta (the bacon juices as well) and give it a good stir, then add the pasta and bacon to the salady stuff as you serve and then mix in a couple of spoonfuls of mayo and give it all a good mix.

I don't know why but the hot pasta and bacon goes really well with salad!

I can eat bowls full of that :)
 
Vietnamese/Thai salads.

Lots of different types, but one I like is

Steak cooked very rare and super thinly sliced, Mixed with cucumber, onions, soy sauce,fish sauce, sugar, lime juice, chili, a few peanuts, been sprouts. I think I've left something out.
Can add noodles if you like.

Also agree with the grilled meats, salad in pitta/tortilla wraps.

And simple food like new potatoes, French beans and fish or chroizo.

What you have to do is pick a country with a hot climate and see what they eat.

It is basically a chilled yoghurt based soup, it is really tasty and refreshing on a hot day. Ours tends to have: yoghurt, water, raisins, mint, radish, spring onion, (walnuts - normally added but I'm allergic) and then bread to add before eating. It's quite filling too.

edit: After talking about it my Dad made it for his lunch. :(


I could do with that tonight, instead we're having hot chicken soup... :<

Salad niçoise is always good; grill/bbq some tuna fillets, new potatoes, lettuce, anchovie, olives, green beans, egg.

Honeydew melon with feta cheese or parma ham is nice as well.

Wraps. Plenty of salad and then some chicken or steak.. or just salad!

For something as a side, mushrooms mixed with dijon and wholegrain mustard is quite nice.

As it was so hot last night I had a T-Bone steak, seasoned fries and onion rings with a prawn and mushroom white wine sauce :-)

These are my favourite on a hot day. Plenty of salad, loads of cherry tomatoes, some crated cheese and whatever else you want in it.

Food on a warm day doesn't have to be cold but I prefer it to have very little cooking/prep time.
 
We tend to replace our traditional Sunday roast with roasted Mediterranean vegetables. Basically:

- Cook up your meat (although I would recommend a lemon seasoned chicken)

- Chop some veg (red onion, normal onion, carrot, butternut squash, sweet potato, normal potato (wedges) and maybe some peppers.

- Coat in some sort of mediterranean vegetable mix such as: http://www.schwartz.co.uk/productdetail.cfm?ID=10483

- Roast veg

Serve with a nice green salad. Lovely, especially in the hot weather :cool:
