How big of an actual performance increase am I going to see with this new setup?

To be honest I was a bit wary to upgrade my current system because I didn't know if the performance increase would be that much (actual perfomance, not benchmarks). I currently have:

AMD x2 3800+ @ 2.5GHz
ASUS A8N-E
2x 512MB Corsair Value PC3200
XFX 7600GT XXX Edition
Antec SmartPower 480W PSU

And I have just purchased:

E6320
Gigabyte S3
Crucial Ballistix PC5300 C3 (could only afford 1GB)

I'll try to overclock as much as I can, hoping to get to about 2.8GHz (I'll be using stock cooler for now), but will try going higher when I get a good cooler. I do a lot of video encoding, editing and capturing. I don't really play games (only Halo PC and will be play Halo 2 Vista when it comes out).

So I was just wondering how much of a difference would I see when doing the things I've listed with the new setup.

For everyday life not much a new harddrive would improve that area.

Well I just recently bought a WD 500GB AAKS drive, which is pretty fast.
