How can I stop a partition being mounted in Leopard?

Unfortunately, you have to do it the UNIX way and "/etc/fstab" does exist :p

You can follow this guide which is for hiding the Boot Camp partition but it's exactly what you're after. After following the guide, you can always manually mount the partition whenever you open Disk Utility :)

Excellent guide, I've just done this to hide my Boot Camp partition which I'd previously hidden using the . thing. It no longer appears in Finder but sadly VMWare Fusion still displays a Boot Camp partition which I don't want it to do as I have no intention of using my Boot Camp partition in VMWare.
 
I just rename it .Windows or something. Don't care about VMWare picking it up as it's not a bootcamp partition anyway.
