I put my own shots onto the 360 using a memory stick and set them as the background.

can share pics from your pc, just enable sharing on my pictures folder or in WMP11 and you can pick anything you want

IIRC press the guide button, personal settings and then go to themes. There are a number on there by default, and others can be either downloaded for free or for a charge through the marketplace.

As pointed out you can use your own pictures too.

One thing to point out is that a lot of the themes have awful background colours for the system blade that appears when you hit the guide button. This can be altered independently of the rest of the theme.
